Nguyên liệu làm tiết canh từ củ dền

Phần nhân: 200g cuống họng, 200g cuống tim, 120g thịt dải (có thể thay thế bằng mề gà), 100g gan, rau thơm (húng bạc hà, húng chó, mùi tàu), hành củ nướng vàng băm nhỏ, nước mắm, bột canh.

Phần tiết: 200g củ dền đỏ, 20g bột sương sáo (hoặc bột rau câu con cá dẻo), 600ml nước.

Các nguyên liệu khác: Lạc rang giă dập, chanh hoặc quất, ớt tươi, hạt tiêu.


Các chị em có thể dùng bột sương sáo hoặc bột rau câu con cá dẻo đều được.

Cách làm tiết canh củ dền

Phần nhân:

- Cuống họng, cuống tim, thịt dải, gan rửa sạch rồi đem luộc chín. Khi luộc cho thêm gừng đập dập và 2 th́a gia vị. Luộc xong giữ lại phần nước luộc.

- Đem cuống họng, cuống tim, thịt dải và gan đi băm nhỏ. Để lại một ít gan thái lát mỏng.

- Rau húng chó và mùi tàu rửa sạch, 1 phần băm nhỏ.

- Trộn hỗn hợp cuống tim, cuống họng, thịt dải và gan đă băm với hành nướng băm nhỏ và rau thơm băm nhỏ. Thêm một chút nước mắm, gia vị, hạt tiêu.

- Cho phần nhân ra bát.

Phần tiết:

- Củ dền gọt vỏ thái nhỏ rồi xay nhuyễn cùng 1 th́a cà phê muối và 600ml nước luộc ở trên rồi lọc lấy nước cốt.


- Ḥa tan bột sương sáo với 50ml nước củ dền. Đun sôi 550ml nước củ dền rồi cho 50ml nước củ dền và bột sương sáo c̣n lại vào đun thêm một lúc rồi tắt bếp.

Hoàn thành:

- Đổ hỗn hợp nước này vào các bát nhân đă làm trước đó. Sau đó để nguội rồi bọc màng bọc thực phẩm và cho vào ngăn mát tủ lạnh.

- Sau khi sản phẩm "tiết canh" đông lại th́ rắc thêm lạc, gan và vắt chanh lên là có thể ăn được.
