Gần đây nước mắm sản xuất tại Việt nam được công bố 101 loại nước mắm nhiễm thạch tín cao khiến người dân trong và ngoài nước hoang mang về nước mắm Việt.Bức xúc trước điều này,cựu kỹ sư gốc Việt từng bỏ việc tại Apple và quyết định trở về Việt nam làm nước mắm xuất khẩu sang Mỹ.Anh bắt đầu trải ḷng về cái nghề làm nước mắm tại quê nhà.

Mới đây Hội tiêu chuẩn và bảo vệ người tiêu dùng Việt Nam (VINATAS) công bố thông tin cho biết 67% số nước mắm lấy mẫu thử không đạt chỉ tiêu về arsen tổng theo quy định của Bộ Y Tế. Kết quả này được đưa ra sau khi VINATAS khảo sát 150 mẫu nước mắm thành phẩm đóng chai có hàm lượng nitơ toàn phần ghi trên nhăn từ 10g/l đến 60g/l của 88 nhăn hiệu nước mắm được mua trực tiếp tại đại lư phân phối, các siêu thị, trung tâm thương mại, chợ bán lẻ và cửa hàng bán sản phẩm đặc sản.

Việc công bố thông tin này khiến những người làm ngành nước mắm truyền thống bức xúc. Chủ tịch Hiệp hội nước mắm Phan Thiết Trương Quang Hiến cho rằng: “Đưa ra thông tin như vậy là không có trách nhiệm và cần có nghiên cứu, đưa quy chuẩn cho đúng thực tế và công bằng. Không nên lấy quy chuẩn của nước mắm công nghiệp chỉ 2 – 5 độ đạm để áp dụng đưa ra thông tin arsen cao trong các hăng nước mắm truyền thống từ 30 độ đạm trở lên được. Việc Hiệp hội đưa ra thông tin như thế có thể bóp chết ngành nước mắm cổ truyền cũng như có thể ảnh hưởng đến xuất khẩu thủy sản của Việt Nam”.

Ông Nguyễn Duy Hưng, Chủ tịch SSI, đơn vị đầu tư vào thương hiệu mắm 585 Nha Trang, mới đây cũng chia sẻ cách để khẳng định nước mắm nào là độc hại bằng cách xuất khẩu sang Mỹ, phía Mỹ sẽ có câu trả lời.

Trên thực tế, đúng là đă có loại nước mắm truyền thống của Việt Nam, độ đạm cao 40 độ, 50 độ đă có mặt trên các bàn ăn người Mỹ, thậm chí được những đầu bếp uy tín khen ngợi.

Kỹ sư bỏ Apple về Việt Nam làm nước mắm

“Nhiều người nói tôi bị khùng”, Đó là lời tâm sự của cựu kỹ sư Apple gốc Việt có tên Cường Phạm khi quyết định trở về Việt Nam để kinh doanh nước mắm với việc thành lập hăng Red Boat. Ông Cường sang Mỹ định cư năm 1979 sau này làm việc với vị trí kỹ sư hệ thống tại thung lũng Silicon cho những công ty lớn như Apple, Oracle.

Trong lần về Việt Nam năm 2005, ông Cường ngạc nhiên khi nhận ra nước mắm tại quê hương Phú Quốc của ḿnh đậm đà và thơm nồng hơn hẳn các sản phẩm cùng xuất xứ tại Mỹ.

Điều khiến nước mắm Phú Quốc có hương vị đặc biệt gồm nguyên liệu, quy tŕnh sản xuất, đặc thù khí hậu và thổ nhưỡng khác biệt so với những vùng khác. Theo người dân địa phương, nguyên liệu bắt buộc phải là cá cơm, cá cơm sọc tiêu, cơm đỏ và cơm than là tốt nhất. Ngoài ra cá phải được xử lư và ướp chợp ngay trên biển sau khi đánh bắt.

Sau khi t́m hiểu kỹ, ông phát hiện ra rằng có nhiều sản phẩm tại Mỹ là hàng nhái của các công ty ở Thái Lan. T́nh trạng này không xảy ra tại Mỹ mà ngay tại thị trường nội địa có đến 80% nước mắm có dán nhăn Phú Quốc là hàng nhái.

Trở về Mỹ, ông mang theo khát vọng mang nước mắm Phú Quốc đúng nghĩa vào nước Mỹ cũng như khôi phục lại công việc gia truyền bao đời đă mất của gia đ́nh.

Năm 2007, ông Cường mua lại một nhà thùng nước mắm tại Phú Quốc với số lượng ban đầu chưa tới 20 thùng. Để giữ được đúng hương vị truyền thống, ông Cường cho ướp cá đúng công thức có từ 200 năm trước của Phú Quốc tới 12 tháng thay v́ rút ngắn 10 tháng như một số nhà thùng để chạy theo lợi nhuận. Trung b́nh mỗi thùng sẽ cho ra 3.000 lít nước mắm cốt.

Năm 2009, chuyến hàng nước mắm đầu tiên của Red Boat cập cảng nước Mỹ với logo h́nh cánh buồm đỏ. Được sự ủng hộ của cộng đồng Việt kiều, cuối năm đó ông Cường đầu tư thêm 14 thùng ướp cá, một thời gian sau nâng tổng số lên 80 thùng.

Cái tên Red Boat theo giải thích của ông Cường gắn với h́nh ảnh thuyền đánh cá và màu đỏ biểu tượng cho sự hăng hái, may mắn, khát vọng theo quan niệm châu Á.

Tuy nhiên là người gia nhập sau, logo này vấp sự tranh chấp của một doanh nghiệp gia đ́nh khác cũng kinh doanh nước mắm từ năm 1980 tại Mỹ. Dai Yau, người thành lập công ty Anhing cáo buộc rằng nhà sáng lập Red Boat cố t́nh tận dụng h́nh ảnh thuyền buồm đỏ, biểu tượng Phương Đông mà gia đ́nh ông đă xây dựng trước đó.

Phiên ṭa tranh chấp thương hiệu logo giữa Anhing và Red Boat diễn ra năm 2014 khi luật sư hai bên đều đưa ra lư lẽ cho công ty của ḿnh. Luật sư của Red Boat cho rằng h́nh ảnh logo của Anhing khác về màu sắc và chữ tiếng Pháp so với Red Boat đồng thời mức giá chênh lệch giữa nước mắm Anhing (dưới 2 USD/chai) và Red Boat (5-12 USD/chai) không thể gây ra sự nhầm lẫn.

Bán mắm, muối cho cả thế giới

Việc định giá cao, đi vào phân khúc cao cấp là hướng đi khác biệt của nhà sáng lập Red Boat. Ông Cường cho biết: “Tôi nghĩ đơn giản, kinh doanh nước mắm th́ cũng giống như làm phần mềm. Bạn phải thật sự hiểu rơ và tạo ra sản phẩm đúng như ư người tiêu dùng th́ sản phẩm mới được ưa chuộng. Sau đó là phân phối, làm tiếp thị quảng bá sản phẩm. Nhưng trước hết phải là sản phẩm tốt.”

Điều ông học được từ Apple chính là sản phẩm phải có chất lượng. Hiện giá bán lẻ một chai nước mắm Red Boat Kosher Fish Sauce-250ml trên trang web của chính công ty này là 9 USD.

Công ty này c̣n bán cả muối với thương hiệu Red Boat. Hay trên Amazon, sản phẩm nước mắm này cũng được bán chạy và nhận được nhiều lời khen ngợi từ khách hàng.

Một điều thú vị là mặc dù Red Boat có mặt tại Mỹ mở rộng ra cả Pháp, Úc, Singapore, Châu Âu, Hong Kong nhưng bạn không thể t́m mua được loại nước mắm này tại chợ hay siêu thị trong nước bởi toàn bộ sản phẩm đều được xuất khẩu.

Ngoài việc tập trung vào chất lượng, một bước đi quan trọng của ông Cường chính là xây dựng thương hiệu. Hiểu được sức mạnh của truyền thông, Red Boat tài trợ chuyến đi tới Việt Nam cho một số Blogger của Food Republic, những đầu bếp nổi tiếng như Paul Qui, Edward Lee, Bryan Caswell để kể câu chuyện về nước mắm. Ngoài ra trên trang web của Red Boat cũng ngập tràn những bài báo ẩm thực đề cập tới thương hiệu nước mắm này như The New York Times, Los Angeles Times, The Daily Meal, InStyle Magazine, Food & Wine,…
